I want to go to Belize so that I can learn about the cultures and history of Belize. I would also like to learn about the wildlife such as bugs, birds, lizards, snakes, and some of the plants used for medicinal purposes. This knowledge could help me later on in life because I would be able to recognize weather something is poisonous and deadly or safe to touch or eat. I would like to explore some of the caves found in Belize and find out how they were formed. I would also like to explore the coral reef and study the water life that lives there. I have been in two science and nature programs.

We would love to get away to Belize and hideaway in the warmth of the sunshine and the warmth of the Belize people, see the ocean, and relax. We love the hispanic culture (we are learning spanish as much as our neighborhood is hispanic), hispanic food, and we have heard so much about Belize from our friends who have traveled there often.

I have never been to Central America and it would be a dream for me to visit Belize in order to know more about the local culture and traditions of pre-Columbian societies. Indeed I am currently studying the myths of the 3 Americas and I am particularly interested in the Amazon myth but also in the importance of tobacco as a way to communicate with the Gods.

Like most divers, I’ve heard great things about scuba diving in Belize, but for various reasons first travelled further afield to places like Tonga, the Cook Islands and Australia. They were all superb, but what a surprise to discover that the absolute best diving to be found anywhere, and I do mean anywhere, is in the tiny little Central American country of Belize.

A friend of mine had visited Belize in the early seventies and came back raving about it. Belize was a tropical paradise, she told me, with unspoiled beaches, lush forests, Mayan ruins, and an incredible network of caves. The people in Belize were kind and friendly and interested in the visitors who came to see their country. Mexicans, sad to say, tended to be overwhelmed by too many tourists and a bit jaded. But best of all, in Belize they spoke English.

There’s little evidence to visitors that any part of Belize is under threat. The jungles are lush and verdant, alive with macaws, toucans, parrots and howler monkeys. The water is teeming with fish, turtles and sea mammals.

Tomorrow, November 19th is Garifuna Settlement day in Belize; festivities are celebrating all over the country but most popular in the south since most of our Garifuna people are situated there. This incredible day was founded in 1941 by Thomas Vincent Ramos and was established a National holiday in 1943.

The action was on the final day of the three-day Belize Reef Summit and is part of the launch of the Harmony Initiative, a partnership between the film “Harmony” narrated by Prince Charles, and the Global Campaign for Climate Action.

Sauté the lobster crust in some hoe coconut oil, add the vegetables and herbs and continue to sauté for 10 more minutes.
Add the white wine and 2 cups water and bring the sauce to boiling point. Let the sauce simmer for about 30 minutes before straining it through a fine sieve.
Reduce the liquid to half and add the heavy cream. Bring sauce to boiling point and season with salt & pepper

This place was amazing from top to bottom! Management and staff are certainly doing a great job. Property was properly manicured, food was excellent, bar was cozy and room was fantastic. This was my second time there and i would definetley go back!

My travels in the past have never taken me to a world like that of Belize. Lets just say it is a far cry from Door County WI and WI Dells. Well I guess there was Disney and a cruise but lets face it raw nature takes president over a world of fantasy. I have had the opportunity to travel out of country however my husband has not had the travel opportunities that I have had. I would love for him to experience the world outside with new eyes. I would love to escape our world for a truly magical vacation and be able to return home with a fresh take on life. I am ready to be humbled by our world and from what I have heard, the jewel that is Belize. I’m sure this would be a vacation of a life time and the creation of many happy memories for my family. So this is my plea for a remarkable escape…

Melt 1 oz of the butter in a Teflon sauté pan and scramble the eggs over low heat, just before the eggs start drying, add the rest of the butter and melt it with the eggs. Add salt and pepper to taste. Place a skillet over dry heat. Place a tortilla on the skillet and place one eight of the scrambled eggs, 1/8 of the vegetables and the sausages and one spoon of sour cream on the middle of the tortilla. Than place the cheese on top and fold the tortilla to form the quesadilla. Cook one more minute on each side and keep them warm in the oven.
